
Cornbread Cookies Recipe
Ingredients
- 1 stick of butter (room temperature or slightly melted)
- 3/4 cup of sugar
- 1/2 of a beaten egg
- 2/3 c + 1 tbsp flour
- 1/3 c + 1 tbsp corn meal
- 1/2 tsp baking powder
- 1/2 tsp sea salt
Directions
In a large mixing bowl, mix together the butter and sugar until well combined. Then add the 1/2 egg and mix again.
Separately, whisk together the rest of the ingredients until well combined.
Slowly add the dry ingredients to the butter and sugar, mixing as you go, until everything is well combined.
Divide into 12 equal parts and roll into balls.
Place on a buttered baking sheet two inches apart.
Bake at 350° for 14-16 minutes or until the edges are just starting to brown.
Cool on the baking sheet for 5-10 minutes.
